不同产地5种菊花氨基酸组成分析及营养价值评价

摘要:
以滁菊、黄山贡菊、亳菊、杭白菊及昆仑雪菊为研究对象,采用赛卡姆S433D全自动氨基酸分析仪检测5种不同产地菊花氨基酸组成,探讨其营养价值,为茶用菊花的开发提供数据支持。结果表明,不同产地菊花所含氨基酸种类不同,共检测出17~19种氨基酸,均含有人体必需的7种氨基酸,其中滁菊氨基酸含量和必需氨基酸含量均最高,且含有一种特殊的氨基酸—牛磺酸。以 FAO/WHO 氨基酸模式谱为标准,昆仑雪菊较为适宜;以 FAO/WHO 提出的理想蛋白质为标准,亳菊较为适宜;以味觉和功能性氨基酸为开发目标,滁菊较为适宜。与传统茶叶中必需氨基酸含量的比较,5种菊花均达到茶用标准。

Analysis of amino acid composition and nutritive value of five cultivars of Chrysanthemum morifolium from different producing areas

Abstract:
In this study, amino acids contents in five Chrysanthemum morifolium, i.e. Chuzhou Chrysanthemum, Tribute Chrysanthemum, Morifolium, Marguerite Chrysanthemum and Kunlun Chrysanthemum from different producing areas were determined using Sykam S433D automatic amino acid analyzer. The amino acids composition and nutritional values of the five chrysanthemums were discussed so as to provide basic data for their industrial development. Results showed that the Chrysanthemums from different producing areas contain 17-19 kinds of amino acids, all with seven kinds of essential amino acids. The contents of amino acid and essential amino acid in Chuzhou Chrysanthemum are the highest among the five chrysanthemum, and Chuzhou Chrysanthemum contains a special amino acid―taurine. Basing on the amino acid pattern spectrum suggested by FAO/WHO, Kunlun Chrysanthemum is the best; basing on the ideal protein pattern, Morifolium is the best. To exploit gustation and functional amino acids, Chuzhou Chrysanthemum is the most suitable. Comparing with the content of essential amino acid in traditional tea, five chrysanthemums all satisfy the tea standard.
