HPLC-MSn对普洱茶各萃取组分与茶褐素中化学成分的分析

摘要:
普洱茶是一类具有多种保健功效的后发酵茶,茶褐素是其重要的功能成分。茶褐素是普洱茶在渥堆过程中形成的一类结构非常复杂的混合物。茶褐素的主要成分是一类黄烷-3-醇的微生物代谢产物,其中以Puerins I-VIII为代表。利用系统的有机溶剂萃取,获得普洱茶不同萃取物和茶褐素组分,对获得的组分进行多酚类成分分析,发现在茶褐素部位未检出EC、GC、ECG,其中可可碱含量明显高于其他萃取部位。釆用高效液相色谱-质谱联用法(LC-MSn)对普洱茶各萃取组分和茶褐素组分进行成分分析,比较普洱茶茶褐素与其他萃取物之间的化学成分差异,发现了茶褐素部位的主要标志性代谢产物普洱茶素。

Analysis of chemical compounds of theabrowine from pu-erh tea using HPLC-MSn

Abstract:
Pu-erh tea is a kind of post-fermented tea products, the bioactive polyphenols and theabrownine of which possess varieties of healthcare functions. Theabrownine is a type of structurally complicated tea pigments, which are formed during the piling fermentation of ripened pu-erh tea.The different fractions and theabrownine of ripened pu-erh tea were separated using organic solvents’ extraction, and subsequently were compared polyphenols chemically using high-performance liquid chromatography. EC, GC and ECG were not detected in the theabrownine,However, Theabrownine of theabrownine is higher than other extractions.The puerines were identified as the special component in theabrownine by using high-performance liquid chromatography coupled mass spectrum (LC-MSn).
