食品中单增李斯特菌检测技术研究进展

摘要:
单增李斯特菌是一种重要的人畜共患食源性致病菌,如何有效控制食品(尤其是即食食品)中的单增李斯特菌,是食品安全的重要任务,其中快速、准确的检测技术是关键因素之一。作者对单增李斯特菌的传统检测法、免疫学检测法和分子生物学检测法进行综述,并对目前国内单增李斯特菌检测过程中所存在的问题进行探讨,以期为今后的研究提供参考。

Abstract:
Listeria monocytogenes is a foodborne pathogen in both human beings and animals, which has already aroused great concern from various countries. How to control L. monocytogenes in food (especially ready- to-use food) is one of the important tasks of food safety. Fast and sensitive detection technology is one of the key factors. This paper summarized the traditional detection method, immunoassay and molecular biological assay of L. monocytogenes. To provide reference for further research, the problems that exist in the domestic detection process of L. monocytogenes at present also had been discussed.
