云南不同地区普洱晒青毛茶品质差异性研究

摘要:
对来自云南普洱茶主要产区的20个晒青毛茶进行研究,检测毛茶的多酚类总量、氨基酸总量、可溶性糖总量、咖啡碱等主要化学成分;利用高效液相色谱(HPLC)技术对毛茶的儿茶素进行分析;运用主成分分析的方法,对不同产地的毛茶进行动态聚类分析。结果表明,不同产地毛茶在主要化学成分组成上存在着差异性,同一地区毛茶基本一致,为普洱茶加工中发酵的控制及原料的拼配提供了一定的理论依据。
