萝卜贮藏期间木质素、纤维素和可溶性糖含量变化及其与糖心的关系

摘要:
对萝卜贮藏期间木质素、纤维素和可溶性糖含量变化及其与糠心指数的关系进行研究,结果表明,糠心指数在贮藏后50d发生极显著增加;木质素含量在贮藏后30d、纤维含量在贮藏后40d发生显著增加;可溶糖含含量在贮藏后30d发生极显著升高,而后发生极显著下降,糠心指数的变化与木质素、纤维素的含量变化呈极显著正相关,可溶性糖含量与糠心指数的变化呈不显著负相关。由此可得出。木质素、纤维素含量的增加是萝卜肉质根贮藏期间糠心现象发生的重要原因,萝卜在贮藏40d后,食用品质发生显著下降。

Abstract:
In this experiment, changes of lignin, cellulose and soluble sugar content and hollowing index of radishes during storage were studied and their correlations were analyzed.The results showed that hollowing index increased significantly in 50 days after storage.Lignin and cellulose content increased markebly in 40 days after storage,and soluble sugar rose in 30 days and dropped after 30 days.Positive relations between hollowing index and lignin and cellulose were significant and negative relation between hollowing index and soluble sugar was not significant,indicating the increase of lignin and cellulose was the main reason causing hollowness.
