安徽水稻主要品种稻米品质初步测定

摘要:
本研究对我省栽培的66个水稻品种的主要品质性状进行了测定分析。结果表明:粳稻的碾米品质、外观品质和食用品质一般优于籼稻,籼稻的蛋白质含量高于粳稻,尤以早籼为高,平均达13%,但多数品种的外观品质较差,直链淀粉含量偏高。为数不少的中籼品种外观品质和食用品质已有明显改进。籼杂稻米多属中质类型,其整精米率偏低的观象较为普遍。今后本省稻米改良的重点应以籼稻为主。

Abstract:
In this study, sevarel major quality characteristics of 66 rice varietiescultivated In Anhui brovince were measured and analysed. The results showedthat, the milling, apparent and eating qualities were more excellent in kengvarieties than in Shien varieties usually, and the protein content was higherin Shien varieties than in keng varieties. Most early Shien varieties had poorgrain apparance, but high Amylose and highest protein content (get to 13%averagely). Nowadays, the apparent and eating qualities had been improvedobviously in many middle rice varieties. The quality of hybrid rice belongedto middie class, and its polished rice % was low usually.From now on, therice quality improvement in local province should be stressed on the shien va-ricties.
