无铅溏心皮蛋的试制

摘要:
溏心皮蛋是我国的名特产品,生产溏心皮蛋的传统配方中需加入氧化铅,铅对人体是有害的元素。本试验研究用添加剂AN_1(代号)来代替氧化铅生产无铅溏心获皮蛋得成功。

Abstract:
Preserved duck eggs with a soft yolk is a famous special product in China. Inthe traditional directions for preserving the eggs, lead oxide, harmful to human, mustbe added. In the present study. additive "AN_1" is used to replace the toxic lead oxide forthe preparation of preserved duck eggs with a soft yolk.
