Abstract:The extraction process of protein from green tea residue by cellulose enzyme and alkaline protease was investigated. Reference factors including the extraction temperature, enzyme dosage, pH value and extraction time were considered to determine the best extraction condition by response surface design. The results showed that the optimum condition for protein extract with cellulose enzyme was 41℃, 2% cellulose enzyme, pH 6.4, and 64 min for enzymolysis. The protein extraction rate was 6.58% under the condition. The optimum condition for protein extract with alkaline protease was 60℃, 2% alkaline protease, pH 8.7, and 90 min for enzymolysis. The protein extraction rate was 20.93% under this condition, and the rate with combination of these two enzymes was 32.18%.
