The grain proteins of 50 China-grown winter wheat cultivars were fractionated by SDSpolyacrylamide gel electrophoresis to determine their high molecular weight glutenin subunit com-position. Using the method described by payne (1987), the quality scores of each of the subunitswere summed to create a Glu-1 quality score for each cultivar. The results indicated that China-grown winter wheats have rather low Glu-1 quality scores. It was the most important reason thatthe frequency of subunits 5+10 was very low. The results were discussed in relation to futurestrategies for improving bread-making quality of China winter wheat cultivars.
