Abstract:A new type of technology for canning peeled-grapes in syrup is proposed in the present paper. A kind of food fiber can be used for making a thin, smooth and soft coating on the surface of peeled-grapes, before canning peeled-grapes. As compared with the common used one the new technology not only raises the quality of canned peeled-grapes in syrup, but prolongs shelf-life significantly. In addition, the new technology can be used in various varieties of grapes.
