    摘要:

    本研究是利用可食性纤维物质对去皮葡萄表面进行涂被处理,使果粒外表形成一层簿而光滑的软膜后再装罐制成罐头的新工艺。结果表明,采用着膜新工艺,能提高产品质量,延长产品的货架寿命,是解决去皮葡萄罐头不耐贮运的新途径。

    Abstract:

    A new type of technology for canning peeled-grapes in syrup is proposed in the present paper. A kind of food fiber can be used for making a thin, smooth and soft coating on the surface of peeled-grapes, before canning peeled-grapes. As compared with the common used one the new technology not only raises the quality of canned peeled-grapes in syrup, but prolongs shelf-life significantly. In addition, the new technology can be used in various varieties of grapes.
