Abstract:Meat quality of 112 (at 90 kg liveweight) Wannan Spotted pedigree breeds and crossbreeds crossed with medium type Yorkshire, large Yorkshire, Duroc USSR-large white, Landrace, and Rongchang pedigree boars was studied. The experimental pigs were fed at higher energy (HE) and lower energy (LE) feeding levels. The results show that the lean percentages of the shank and rear end of the crossbreeds are increased The carcass lean% of the crossbreeds is increased at LE. As comoare with that of pedigree breeds, the muscle-moistureloss% of crossbreeds is 25.4 to 32.3%, the lower cooked-meat% is 65.54to 70.84%. The effects of crossing on the diameter and density of the muscle fibres, PH, and muscle colour of the pigs are not significant, but the Protein content of crossbreeds is much higher than wannan spotted.
